From my observations, kids are now just throwing them in thr trash instead of eating. Just the fact...I think this is an incredible idea! Just the fact that the salad bar is there will send an important message to kids and it will give them a healthy choice. <br />My school has a salad bar that most days (not nearly every day) looks pretty good. However...the salad bar is competing with corn dogs, pizza, chicken patties, etc., and the ever-popular chips, muffins, ice cream and fruit roll-ups at the other stations in the cafeteria. Salad bars are an incredibly valuable tool in encouraging healthy eating habits in the lunchroom. Not only do they increase exposure to and familiarity with new foods (something numerous studies have shown in increase intake) but they also support support autonomy, initiative and industry, three stages in Erikson's stages of psychosocial development.
