Many of the dining service workers are employed by the College and the management is Sodexo. At the same time, there's nothing "healthy" or nutritious about food that doesn't get eaten. When it comes to actually eating the food, the kids are in charge. You can't make them eat stuff they don't want, and there's nobody in the cafeteria coaching the kids on eating better. We really need to rethink how we approach this business of feeding children at school. Jiggering with nutrition guidelines isn't the solution.Ed Bruskehttp://www.theslowcook.comnoreply@blogger.comtag:blogger.com,1999:blog-4041351940135831902.post-2951357743629646442011-11-16T11:17:52.449-05:002011-11-16T11:17:52.449-05:00"Cooper tried to remove nachos from the menu ..."Cooper tried to remove nachos from the menu entirely. But she was forced to reinstate them in a healthier version--meaning no processed cheese out of a can--after students went on strike, refusing to eat in the cafeteria."

Sometimes I wonder -- who is in charge here? The adults, or the children?

While it's true some children will go to great lengths to avoid foods adults consider "healthy" -- it's not necessarily true of all children once they've been properly introduced to the joys of healthy food, and it doesn't have to be that way. It's partly about setting an example, creating a society where those foods are a celebrated part of the culture. In demand. One where TV advertisements and cartoons don't tell you that you're supposed to hate vegetables. I hope to see that society emerge in America in my lifetime!

It's extremely upsetting that sometimes it feels as though everyone in America is actively working against the best interests of our nation's children. Food companies fight to keep unhealthy, processed food on the menu. Organizations and associations funded by food companies fight to keep unhealthy food on the menu. Schools often fight to keep unhealthy food on the menu, for various reasons -- be it cost, lack of infrastructure or ease of preparing and serving.

I love reading your blog because it helps remind me that I'm not alone -- that there are those trying their hardest to fight for the well-being of the next generation!
